SEO Test | Can Google understand text in images?

It has generally been an SEO best practice to use text vs images when possible for SEO. However recently I have been hearing that Google is leveraging technology that will allow this search engine to understand text in an image. There is even talk of people siloing images with text. In order to first test this theory I have created a HTML document that consists of an image of text. I will create one link to this html document here so that the search engine can discover the page. The next step will be to wait a few days for Google to index the page. Then once the page is showing up in Google, I plan to use a Google site operator in Google to see if Google can return the indexed page filtered by keywords within the image?
For example

site:www.seo-cubed.com “some text from the graphic”

Note, I am not using any keywords from the image to link to the page anywhere, i promise!

So we shall wait and see :)

    According to site operator, Google did not understand the text in the image. However I am told that Google may understand text in an image that is inside a PDF. This will require another test to validate or refute that theory.

    Ok, I found the link via seomoz. Thanks. And now? What happened? Could google read the text?
